Instructions: Zafrani Chicken Biryani Recipe
Marinate the chicken:
Mix the chicken with yogurt, ginger garlic paste, turmeric, red chili powder, garam masala, cumin powder, and salt in a large bowl. Let it marinate for at least 1-2 hours, or preferably overnight in the refrigerator.
Prepare the rice:
Rinse and soak the basmati rice for 30 minutes. In a large pot, boil water with cardamom, cinnamon, cloves, bay leaf, and salt. Add the soaked rice and cook until it’s 70% done. Drain the water and set the rice aside.
Cook the chicken:
Heat a pan and add the marinated chicken. Cook on medium heat until the chicken is tender and the marinade thickens into a rich gravy. Set aside.
Prepare the saffron infusion:
Soak a pinch of saffron strands in 2 tbsp of warm milk and let it sit for 10 minutes. This will release the golden color and aroma of saffron.
Layer the Biryani:
In a heavy-bottomed pot, start by spreading a layer of cooked rice at the bottom. Add a layer of cooked chicken on top, followed by fried onions, chopped coriander, and mint leaves. Drizzle some saffron-infused milk and ghee over the layers. Repeat the process until all the rice and chicken are used up, finishing with a layer of rice on top.
Dum Cooking (slow cooking):
Cover the pot with a tight-fitting lid or seal it with aluminum foil. Cook on low heat for 20–25 minutes to allow the flavors to meld together.Garnish and Serve:
Once done, gently fluff the biryani with a fork. Garnish with fried cashews, raisins, and additional cilantro leaves. Serve hot with raita or a side salad.
