Egg Biryani Recipe with Egg Fry


Egg biryani is a delicious and satisfying one-pot dish, and pairing it with egg fry elevates the experience. Here’s a step-by-step recipe for making egg biryani with a side of egg fry.

Ingredients

For Egg Biryani:

- Boiled eggs: 4-6 (peeled)

- Basmati rice: 2 cups (soaked for 30 minutes)

- Onion: 2 large (thinly sliced)

- Tomatoes: 2 medium (finely chopped)

- Ginger-garlic paste: 2 tsp

- Green chilies: 2-3 (slit)

- Yogurt: 1/2 cup

- Mint leaves: 1/4 cup (chopped)

- Coriander leaves: 1/4 cup (chopped)

- Biryani masala: 2 tbsp

- Red chili powder: 1 tsp

- Turmeric powder: 1/4 tsp

- Garam masala: 1/2 tsp

- Whole spices: (2 bay leaves, 4 cloves, 1-inch cinnamon stick, 2 cardamoms, 1 star anise)

- Oil or ghee: 3 tbsp

- Salt: as required

- Water: 4 cups


For Egg Fry:

- Boiled eggs: 2-4 (halved)

- Turmeric powder: 1/4 tsp

- Red chili powder: 1/2 tsp

- Salt: to taste

- Oil: 2 tbsp

Instructions

Step 1: Cook Basmati Rice

1. Boil 4 cups of water with a pinch of salt and a few drops of oil.

2. Add soaked basmati rice and cook until 90% done.

3. Drain and set aside.

Step 2: Prepare Masala for Biryani

1. Heat oil or ghee in a heavy-bottomed pot.

2. Add whole spices (bay leaves, cloves, cinnamon, cardamom, and star anise) and sauté for 30 seconds.

3. Add sliced onions and sauté until golden brown.

4. Mix in ginger-garlic paste and green chilies; cook until the raw smell disappears.

5. Add chopped tomatoes, turmeric, red chili powder, and salt. Cook until the tomatoes turn mushy.

6. Stir in yogurt, biryani masala, and garam masala. Cook for 2-3 minutes.

7. Add mint and coriander leaves, followed by the boiled eggs. Stir gently.


Step 3: Layer and Cook Biryani

1. Spread half of the cooked rice over the masala in the pot.

2. Add the remaining mint and coriander leaves as a layer.

3. Top with the remaining rice.

4. Cover the pot and cook on low heat (dum) for 15-20 minutes.

Step 4: Make Egg Fry

1. Heat oil in a pan.

2. Sprinkle turmeric, red chili powder, and salt over the halved boiled eggs.

3. Fry the eggs until they turn golden and crispy on both sides.
