Ingredients: Mushroom Biryani Recipe 

For the Rice:

- 1 cup basmati rice  

- 2 cups water  

- 1 bay leaf  

- 2 cloves  

- 1 small cinnamon stick  

- 2 green cardamom pods  

- Salt (to taste)  

For the Mushroom Gravy:

- 2 cups mushrooms (sliced)  

- 1 medium onion (thinly sliced)  

- 1 medium tomato (finely chopped)  

- 2–3 green chilies (slit)  

- 1 tablespoon ginger-garlic paste  

- ½ cup yogurt (curd)  

- 1 teaspoon red chili powder  

- ½ teaspoon turmeric powder  

- 1 teaspoon garam masala powder  

- 1 teaspoon biryani masala (optional)  

- Salt (to taste)  

For the Tempering:

- 2 tablespoons oil or ghee  

- 1 teaspoon cumin seeds  

- 1 bay leaf  

- 2 cloves  

- 1 small cinnamon stick  

For Garnishing:

- A handful of fresh coriander leaves (chopped)  

- A handful of fresh mint leaves (chopped)  

- Fried onions (optional)  

- A few saffron strands soaked in warm milk (optional)

Step 1: Cook the Rice  

1. Rinse the basmati rice in water until the water runs clear. Soak it for 20 minutes, then drain.  

2. In a pot, bring 2 cups of water to a boil. Add the bay leaf, cloves, cinnamon, cardamom, and salt.  

3. Add the rice, cover, and cook on low heat until the rice is 90% done. Drain excess water and set aside.  

Step 2: Prepare the Mushroom Gravy

1. Heat oil or ghee in a large pan. Add cumin seeds, bay leaf, cloves, and cinnamon. Sauté until aromatic.  

2. Add sliced onions and green chilies. Sauté until the onions turn golden brown.  

3. Stir in the ginger-garlic paste and cook for a minute. Add tomatoes and cook until soft.  

4. Add the turmeric, red chili powder, garam masala, and biryani masala. Mix well.  

5. Toss in the mushrooms and cook for 5 minutes, allowing them to release their water.  

6. Stir in the yogurt, mix, and let the gravy simmer until it thickens.  


Step 3: Layer the Biryani

1. In a heavy-bottomed pot, layer half the cooked rice, followed by the mushroom gravy. Repeat with the remaining rice.  

2. Sprinkle chopped mint and coriander leaves. Add fried onions and saffron milk, if using.  

3. Cover tightly and cook on low heat for 10–15 minutes (dum cooking).  

Step 4: Serve

Gently fluff the biryani with a fork to mix the layers. Serve hot with raita and lemon wedges on the side.
